Egg in a Hole

Make breakfast fun with these delicious "eggs in holes"!  And there is no shortage of creativity here.  Go classic with a round cookie cutter or have fun by using animal shapes, a heart shape, a gingerbread man shape or even a star shape for your little star.  Change up the bread: sourdough, white, multigrain, brioche, even a bagel.. the options are really endless!  The recipe below is for one.  Feel free to size it up as needed and to get creative with the add-on's.  This is a classic base recipe.

Don't forget to bring your Eggs book along for some fun conversations and learnings over breakfast!

Ingredients:

  • A small knob of butter and/or 1Tbsp olive oil
  • 1 egg
  • 1 piece of toast or other bread
  • Salt & pepper

Method:

  1. Use the cookie cutter to cut out a shape in the center of your toast/slice of bread.  Get your little hands to help you here! Hang on to the cutout.
  2.  Melt the butter /olive oil over medium heat and add your bread to the center of the pan.  Once toasted on one side flip it over.
  3. Crack the egg in the center of the hole until well cooked.  Sprinkle with desired seasonings and/or toppings and plate
  4. Meanwhile, (if there wasn't enough room in your pan), toast your cutout on either side, serve along with the egg toast and some chopped veggies or fruit and enjoy!

Additions include:

Smashed avocado (full of healthy fats), chopped parsley or other herbs, shredded cheese, sautéed mushrooms, a side of sliced cucumbers or tomatoes, fresh fruit... the options are truly endless!  Sahtein!
